Renowned food creator Malvika Hada Kumar has shared her unique take on a traditional South Indian favorite — the Orappu Adai. This high-protein version of the classic lentil pancake from Tanjore (Thanjavur) blends nutrition with bold flavors, making it an ideal dish for health-conscious food lovers.
The recipe uses a hearty combination of idli rice, raw rice, black urad dal, toor dal, and chana dal. These ingredients are soaked, then coarsely ground with dry red chilies and fennel seeds, giving the batter its signature texture and spicy flavor. What makes Malvika's version special is the added nutrition boost — grated bottle gourd, coconut slices, shallots, curry leaves, and fresh coriander are all folded into the batter, enhancing both taste and health benefits.
